Meet Our New Head Chef Nicolas Fischer

We’re thrilled to introduce our new Head Chef, Nicolas, who has been busy settling into the Taybank kitchen over the past few weeks. Nicolas’s culinary journey spans from Michelin-starred kitchens in his native France to leading the team at James Cochran’s acclaimed 12:51 restaurant in London. His cooking style masterfully blends classical French techniques with modern creativity, resulting in innovative and memorable dishes.

“My love for food is deeply rooted in my French heritage, where cooking has always been at the heart of family life. Inspired by my mother’s simple yet refined flavors, I developed a deep appreciation for high-quality ingredients and the art of fine dining.

I had the privilege of working as a private chef for the quarter royals family house, curating bespoke dining experiences that upheld the highest standards of refinement and also led the team at James Cochran 1251 Restaurant as Head Chef for three years.

For me, food is more than just nourishment—it’s a way to connect, tell stories, and celebrate life. Every dish I create is an opportunity to push boundaries while staying true to the traditions and experiences that have shaped my journey.”

We’re also delighted to welcome more lovely new folks to the kitchen team. They bring fresh ideas and enthusiasm, just as our walled kitchen garden bursts back to life with vibrant spring produce. Expect exciting new dishes that celebrate the season’s best ingredients. As spring blooms around us, we’re excited to share the fresh flavours of the season with you. We’d also like to take a moment to congratulate our former Head Chef Gemma Dallyn on the arrival of her baby boy, a little one who is sure to bring even more joy and new beginnings this spring!
